Sample Recipe
PUMPKIN CRANBERRY BREAD
3 c all-purpose flour
4 large eggs
1 T plus 2 tsp pumpkin pie spice
1 c vegetable oil
2 tsp baking soda
1/2 c water
1 1/2 tsp salt
1 c sweetened dried, fresh, or 3 c granulated sugar frozen cranberries
1 (15 oz) can of pumpkin
Preheat oven to 350 degrees. Grease and flower two (9x15 inch) loaf pans.
Combine flower, pumpkin pie spice, baking soda and salt in a large bowl.
Combine sugar, pumpkin, eggs, vegetable oil and water in a large mixing bow.
Beat until just blended. Add pumpkin mixture to flower mixture. Stir
until just
moistened. Fold in cranberries. Spoon batter into prepared pans.
Bake 60 - 65
minutes or until pick inserted in center comes out clean. Cool in pans for
10 minutes.
Remove to wire racks to cool completely.
